
My friend Michelle and here boyfriend Ilyasse came over this weekend to visit. Rich cooked a couple of great steaks from the "Happy Cow" from Cannon Falls. Its happy cow meat because this cow lived a happy life on the farm - grazing in the pasture, and staying warm in the barn in the winter. Its not organic, but it is humane.
We also got a bunch of yummy fresh veggies from the Hopkins farmer's market - baby bock choy (my favorite), small cucumbers and onions (I made refrigerator pickles), green and purple peppers, tomatoes, basil, and eggplant. Ilyasse showed Rich and I how to make babaganoosh from the eggplant - and on warm grilled french bread drizzled with olive oil it was super delicious.
